i have developed my own method for making veganized brownies. i think they taste pretty good. normally, i would much rather prefer to make them from scratch, but in a pinch, these do just fine.

take one box of pre-made brownie mix. make sure it does not have milk or eggs because a lot of them do. mine was the local store's own version, giant eagle, and was a family size 13x9 although i used a 9x9 pan. i sprayed my glass pan with "pam."

mix in 1/3 cup of earth or smart balance margarine that has been melted in the microwave or on the stove.

add in 3/4 cup of water.

add in 2 tablespoons of oil (i used canola).

then, because the mixture will be too soupy and liquidy, i added and stirred in enough pre-made pancake mix to make it thicker. how much, you ask? enough so that it the batter will slowly stay on the spoon/spatula instead dripping off. you will know when you have gotten it right because it feels more like a brownie batter than a liquid. sorry i can't be more specific. i also melted about 1/3 cup of peanut butter and drizzled it on top.

bake at 350 for about 35-40 minutes. yum. as you can see, i already sampled them along with a with a glass of soy milk. :)

i'm on a food high since finishing reading the wonderful "a homemade life" from molly wizenberg, creator of the lovely "orangette" blog. there is so much that i could say about it that others have already said but trust me, it is a must read. keep your tissues handy, your belly ready to shake from laughter, and be prepared to want to cook or bake at 2:30 in the am which was when i finished plowing through it in one sitting.
